LEEK AND SPINACH QUICHE

I have to be honest, I have never cooked quiche (a.k.a French Tart) before because I stupidly thought it was difficult and I actually though people made the dough from scratch and I’ve never been good at making any kind of dough.
But recently I found out (I know, quite late) that you can buy the dough ready at the supermarket. So I decided to give it a try.
Also I’ve never been a big fan of leek. I think it’s a boring vegetable that’s why I never bought it. But since I stopped eating meat I had to give a second chance to vegetables I was never use to eat in order to  have more variety in my cooking. This was the result!

Ingredients
– 1 ready to use brisée dough
– 2 big leeks, chopped
– 2 cups of fresh spinach
– 1 small onion, chopped
– 1 garlic, chopped
– 1 cup of parmesan cheese
– 3 eggs
– 200 ml of cream
– Salt and pepper
– 1 teaspoon of nutmeg
– Goat cheese cut in pieces to put on top

Step by Step
First, make holes in the dough with a fork and bake for 10 minutes at 180º. Take it out and let it cold.
In a pan fry the onion, the garlic and the leek with some olive oil for a couple of minutes.
Wash the spinach and cut in pieces with your hands. Add to the pan and mix.
In a bowl mix the eggs with the parmesan cheese and the cream. Add the vegetables from the pan, mix and add the nutmeg, salt and pepper.
Put everything over the dough. Cover with some goat cheese and bake for 35 minutes.

I like to serve the quiche with some side salad. You can also cut it in pieces and serve it as an appetizer.

Very tasty! or like we say in Belgium: super lekker!
